WHAT YOU'LL NEED

3 tablespoons garlic, minced
1 leek, sliced
⅓ cup dry white wine
Zest of 2 lemons
2 tablespoons fresh lemon juice
1½ teaspoons dried oregano
1 teaspoon fresh thyme
Kosher salt & freshly cracked black pepper
4 boneless skin-on chicken breasts
1 lemon, cut into wedges

METHOD

Arrange the lemon wedges around the chicken and roast for 30-40 minutes, until golden and fully cooked through. If desired, broil for the final 2 minutes for additional color. Allow the chicken to rest before serving.

TRAVIS'S NOTES

The sauce becomes even better the next day.
Serve with warm bread, rice, or roasted potatoes to soak up the lemon pan juices.
Add the avocado just before serving to keep the salad fresh and vibrant.
