DIRECTIONS
1. Roast the Shrimp
Preheat oven to 450°F. Toss shrimp with olive oil, seasonings, salt, and pepper. Arrange on a sheet pan with garlic cloves and jalapeños.
Roast for 6–8 minutes, then broil for 1 minute until lightly charred.
2. Make the Sauce
Blend roasted garlic, yogurt, lime juice, cilantro, and green onions until smooth. Season with salt to taste.
3. Make the Slaw & Salsa
Toss cabbage with ⅓ cup of the cilantro sauce.
In a bowl, combine jalapeños, pineapple, cilantro, orange juice, lime juice, and a pinch of salt.
4. Assemble
Fill warm tortillas with avocado, cabbage slaw, shrimp, and pineapple salsa. Drizzle with the remaining cilantro garlic sauce and serve immediately.
