1. Prepare the Skillet Preheat oven to 350°F. Place butter in a 10-inch cast-iron skillet or baking dish and melt in the oven.
2. Make the Batter Whisk together flour and sugar. Add milk and stir until smooth.
3. Season the Peaches In a bowl, combine peaches, brown sugar, granulated sugar, cinnamon, vanilla, and bourbon. Toss gently to coat.
4. Assemble Pour the batter over the melted butter. Do not stir. Spoon the peaches evenly over the batter, again without stirring.
5. Bake Bake for 40–50 minutes, until golden brown and bubbling around the edges.
6. Serve Let cool slightly before serving. Top with vanilla ice cream or whipped cream.
