DIRECTIONS
1. Cook the Tomatoes
Heat olive oil in a large skillet over medium heat. Add tomatoes and cook for 6–8 minutes, stirring occasionally, until softened and beginning to burst.
2. Build the Sauce
Add shallot and cook for 2 minutes. Stir in garlic and red pepper flakes and cook for 30 seconds. Add broth, cream, Italian seasoning, and lemon zest. Bring to a gentle simmer.
3. Add the Ravioli
Stir in Parmesan cheese. Add ravioli, cover, and cook according to package directions until tender.
4. Finish
Stir in spinach, basil, and lemon juice. Season with salt and pepper. Add a splash of broth if needed to loosen the sauce.
5. Serve
Top with burrata, extra Parmesan, fresh basil, and a squeeze of lemon before serving.
