1. Char the Corn
Heat oil in a large skillet over medium-high heat. Add corn and season with salt and pepper. Cook, stirring occasionally, until lightly charred and tender, about 8–10 minutes. Remove from heat and let rest for 2 minutes.
2. Make the Dressing
In a large bowl, whisk together mayonnaise, crema, cilantro, and lime juice. Season to taste with salt and pepper. Reserve a few spoonfuls for finishing.
3. Assemble
Add the warm corn to the bowl and toss until evenly coated. Transfer to a serving dish and spread into an even layer.
4. Finish & Serve
Drizzle with the reserved dressing. Top with Cotija cheese, a sprinkle of chile powder, and additional cilantro. Serve warm with lime wedges alongside.
